Pav is the Indian name for dinner rolls or buns that are often used in Mumbai street food. The Portuguese introduced the cube-shaped bread, called pão by them, to Mumbai in the mid-1500s, and it’s now a staple of the city’s food culture. Pav is usually made with refined wheat flour (maida) or all-purpose flour, but it can also be made with whole wheat flour or a combination of the two.
