Tindora, also known as ivy gourd, is a small, green Indian vegetable with white stripes that resembles a cucumber. It has thick skin and crunchy, white flesh with many small seeds that turn red when ripe. Tindora can be eaten raw in salads or cooked in curries, stir-fries, chutneys, and pickles, or roasted as a side dish. It’s high in antioxidants and vitamins A and B, and is said to help with blood pressure and diabetes.
